I've been to the Maldives and it's beaut (if yu can afford it) but the recommendation from my humble experince would be Nagiggia on Kadavu, Fiji. Check it out http://www.fijisurf.com.

It's about half/third what a Maldives trip would cost for the week/fortnight, and in an even more beautiful location. Not as much wave choice but less crowded. Food not cooked by trained chefs, but friendlier, more genuine locals. Zero nightlife, 'cept for weekly kava party.

If yer missus is content with surfing, snorkelling, bonking and chilling in paradise it could be the place. My avatar was snapped on the approach.
