If you progress quickly, you could be on a fish around 6'6 within 3 or so months but you're still better off borrowing/buying around an 8ft mini mal to get the basics down, then just trade it in for another board.
I'd be pretty skeptical of a scot surf instructor unless he rips. Just surf every day no matter the conditions, and watch how other people do it. If it's unsurfable ie closeout shories, bodysurf it.

I'm eying a second hand custom mini-mal. I am a bit concerned about two things -
One, the glassed on fins. I figure I am better off with removable ones to start with, in case I break one.
Two, the fact that it's 8'1" but only 21.25" wide, and 2.75" thick. Is this too narrow for me?

I think, I found a great spot today for you. Voodoo, it looks a little bit powerful, but it's uncrowded. But just in case, you can ask also your scottish instructor or the guys here....
But forget to post your board, or your wife, sister, brother... when you finally buy it. I think some guys are really jealous then...
