Three boards.
1. Your fav go to short board.
2. Your fav go to short board incase you snap the first.
3. Something just a little bit longer and refined for solid hollow days or spots you need to get in real early.
If you really want to mix it up and are into riding different designs a small wave board like a fish etc isn't as crazy as it sounds, its not always barrels plenty of just fin waves from super ripped;e to mellow and cruisey, but most guys would be happy to just surf their go to short boards.

If I was going to indo tomorrow, I wouldn't be going with anything flat.
I surfed a DHD 6'2 sweet spot which had the most rocker out of any of my boards. I wasted a fair bit of time on my other flatter boards. I was on a single fin tangent at the time and had just taken custody of a 6'8. I had a 6'2 Mini merk in the bag too which I didn't use the whole trip.
I'd be taking the following boards:
6'0 PCC shorty for the really small days
6'0 slater designs Gamma for the waist to head high
6'2 sweet spot 2.0 for anything bigger than head high.
